Vegan Pad Thai

EVERYONE loves a pad thai. Oh you don't? Well try this out and get back to me!





Recipe


PAD THAI

1 small zucchini spiralized

2 carrots spiralized

1 red capsicum thinly sliced

1 cup snow peas, thinly sliced

1 cup bean sprouts

1 cup edamame beans (shelled)

1 cup basil leaves (thai)

1 cup shredded white cabbage

I TBS black sesame to garnish

½ cup spring onion too garnish

SAUCE

1 tsp grated ginger

1 garlic clove, minced

¼ cup almond or peanut butter

2 TBS lime juice

½ TBS sesame oil

INSTRUCTIONS

1. Spiralize carrots and zucchini, thinly slice capsicum and snow peas, shell edamame (if needed), shred white cabbage. Put all in bowl

2. In separate bowl place all ingredients for sauce; ginger, garlic, peanut butter, lime juice, sesame oil. Mix – thin with water if needed.

3. Toss vegetables through dressing. Garnish with black sesame, spring onions, or crushed peanuts.
