Raw Vegan Carrot Cake

This carrot cake is FOOLPROOF I tell you! It's gluten free, dairy free, refined sugar free and requires no oven skills whatsoever. It's just jam-packed with wholefoods and nutritious goodness. Enjoy!

Recipe
CAKE
2 cups finely shredded carrots
2 cups packed pitted medjool dates (measured after pits removed)
2 1/2 cups raw walnuts (processed) + 1.5 cups extra (chopped through)
3 tsp vanilla extract
¼ tsp sea salt
2.5 tsp ground cinnamon
1.25 tsp ground ginger
2 pinch nutmeg
1/2 cup almond flour/coconut
2/3 cup raisins
1/3 cup Pepitas
½ cup slithered almonds
2/3 cup sultanas
2/3 cups coconut flakes (I prefer the thick flakes over the fine desiccated coconut, give it more texture)
FROSTING (optional)
1 1/4 cup raw cashews
1/2 cup coconut cream
2 Tbsp lemon juice
3 Tbsp maple syrup
1 tsp vanilla extract
